crockpot shredded bar b que sandwich

3 large boneless, skinless chicken breast
low carb bar b que sauce  (in this one I did my own)
Revoluntary rolls

I put the chicken breast in a crock pot with my homemade bar b que sauce and let cook for about 6 hours, once done I took 2 forks and shredded it and then served it on a my bread

Bar b que sauce
I didn't measure this
About 3/4 cup of ketchup - (the no added sugar one0
about 1 tbls of mustard
1 tbls of Ideal brown sugar
splash of apple cider vinegar
onion powder and garlic powder
1 tbls of Worcestershire sauce
dash of salt

Salsa Chicken

Well I really didn't know what else to call this, so Salsa chicken it is!

3 to 4 large boneless, skinless chicken breast - or more depending how much you want to make
4 oz of cream cheese
3/4 of a large jar of salsa - I use the walmart brand

Throw all your ingredients in a crockpot and cook for about 6 hrs, when it was done, I took to forks and pulled the chicken apart (shredded it).  This was good as a dish by itself or as tacos

tortillas

 A tweaked recipe -

2 eggs
1/4 plus 2 tbls of water
1 tsp of lime juice
1/4 tsp baking powder
1 tsp of cumin
1 tsp of onion powder/ garlic powder
1 tsp of chili powder
2 tbls of coconut flour

Beat your eggs in with the water and lime juice, then add your dry ingredients and whisk together good.
Take a small non stick pan and add a little butter or olive oil and then pour in about 1/4 cup of batter and move your pan around so the batter coats the whole bottom, let your batter sit for about a minute and then put a lid over the pan and let the tortilla cook for another 2 minutes and then uncover and flip.  This makes about 4 tortillas

Chocolate bars and bites


I remember when I first started low carb, I searched the net for low carb candy bars as they are my weakness and I wanted one I could take to the movies that wouldn't melt on me.  I order chocoperfection but for the price I was not impressed at all.  I found a recipe for a "candy bar', on one of my favorite blogs, "sugarfreelowcarbrecipes.com".  So this is a tweaked recipe from hers, only cuz I like mine sweeter and I can't do stevia, it gives me a bad migraine, check out her blog though, she is a genius in the kitchen.

5 ounces of unsweetened chocolate -(I use the bakers cuz trader Joes doesn't sell my chocolate anymore)
a little over an ounce of cacao butter (I bought mine from Raw power on ebay, but you can get it from amazon or even whole foods)
A little over a Tbls of powdered whole milk
A little of a Tbls of  powdered erythritol
20 packets of splenda
1/2 tsp of vanilla
2 tbls of natural peanut butter or whatever flavoring you want

So with a Wilton Chocolate melter that I got at Walmart, I added the cacao butter first and let it melt and then added the chocolate and let it melt, once melted, I added the whole milk and the sweeteners, once everything is melted good, I add the peanut butter until its smooth and then turn off the melter and added the vanilla.  Then pour into your candy molds.  I had found some heart candy molds at Michael's craft store only cuz I couldn't find a candy bar molds, then I found some small ones on ebay.  So the reason my recipe says "a little" over of some of the stuff is because I made more than the recipe she made.  Mine filled the four little candy bar molds and 8 of the deep heart molds.  These candies can be taken anywhere -  like the movies!

* I started doing these candies and candy bars without the powdered milk to lower the carbs and can't really tell the difference

Japanese Fried Caramel Chicken

3 boneless chicken breast
3 tbls of soy sauce
1 tsp of grated or powder ginger
salt and pepper to taste
3 tbls of peanut flour
1 tbls of minced garlic
2 tbls of reduced sugar catsup
2 tbls of minced onion
1 tbls of walden farms caramel
2 tbls of butter

Cut your chicken up into nuggets

Mix:
1 tbls of soy sauce
3 tbls of peanut flour
1 tsp of ginger
salt and pepper
Coat your chicken in the dip and deep fry it till golden brown
Set your fried chicken aside while you make your caramel sauce

Caramel sauce
in a small pan add your butter, 2 tbls of soy sauce, your chicken broth, catsup, onions, and garlic.  Let it cook for just a bit till your butter is melted, then add your caramel sauce and let it warm through.
Coat your chicken in the sauce and serve with some stir fried or steamed broccoli

Low carb sugar free chocolate coconut pie


Crust:
1 cup of coconut flakes
3 tbls of butter or coconut oil
1 tbls of sweetener

Filling:
1 1/2 cups of coconut milk
1/2 Heavy whipping cream
1/2 cup of cocoa
1/2 cup of erythritol
1/4 cup of splenda essentials
1 cup of coconut flakes
dash of salt
1 tbls of butter
1 tsp of vanilla
2 eggs

Heat oven to 350, put your butter or coconut oil in your pie pan and place in the oven to melt, once melted add your coconut flakes and sweetener and press into the pan and bake until browned.

In a medium saucepan add you sugars and cocoa, and salt and blend, then add your milks and eggs and stir constantly until it comes to a good boil, let it boil for a good 5 minutes and then turn off heat and add your butter, vanilla, and coconut flakes.  Once it is cooled, add it to your pie filling and chill

Low carb sugar free chocolate cream pie

I wanted to try a take on a milk chocolate pie instead of the dark chocolate pie I made here

So this is my take on chocolate cream pie aka milk chocolate
Crust:
1 cup of almond flour
1 tsp of sweetener ( I used splenda essentials)
2 tbls butter

Filling:
1 1/2 cups of coconut milk
1/2 cup of heavy whipping cream
1/2 cup of cocoa
2 eggs
1/2 cup of erythritol
1/4 cup of splenda essentials (opt)
2 squares of 85% Lindt candy
1 tsp of vanilla
2 tbls of butter

Heat your oven to 350, put your butter in your pie pan (I use glass), and let it melt, once it melts, pull it out and add your almond flour and sweetener, mix and press into pie pan, bake until browned.

In a medium sauce pan add your two milk's, eggs, and sweeteners and cocoa.  Cream those ingredients together and cook on medium high heat till boiling, boil for a few minutes, you won't really see it get thick here, but once you have let it come to a good boil then remove from fire and add your chocolate lindt, vanilla, and butter.  Set it aside and let it cool before pouring your filling into the crust.  Once you have poured in your filling put pie in fridge to finish cooling and setting.
