Mediterranean zucchini boats

6 medium sized zucchini cut in half - long ways
1 lb of hamburger meat
1 tbls of minced garlic
1 egg
mozzarella cheese
7 spice to taste
salt to taste
1Roma tomatoe

After you cut you zucchini in half, place in a large pot and boil for 10 minutes
while your zucchini is boiling, brown your hamburger meat, adding minced garlic and your spices.
Once the meat is done, drain off any fat and set aside
When your zucchini is done, take out and scoop out the meat of the zucchini and place in a strainer to strain off any juice in it
Take the inside of the zucchini after it's strained and mix it with your meat mixture and add a beaten egg.
Take your mixture now and place inside the scooped out zucchini and sprinkle mozzarella on top and then bake at *350 for at least 25 minutes, about 5 minutes before it's done take a sliced up Roma tomato and place them on top to finish cooking with the dish.

12 cauliflower rounds (faux corn tortillas) see recipe for them because it is not my recipe

I use muffin top pans to cook my cauli rounds in
1 lb of hamburger meat

1- 15 ounce can of tomato sauce

cilantro

1 maggies chicken cube

minced garlic to taste

mixed cheese

cumin to taste

onion powder to taste

chili powder to taste

lime juice to taste

curry powder to taste

while I am frying the meat, I add minced garlic, cumin, onion powder (or real onions), chili powder, salt and pepper

when meat is down, strain and set aside in a bowl

in a non stick pot I add a little oil and saute cilantro (chopped), onion if you like (chopped), maggies cube (break up), and minced garlic

once it is sauted I add the can of tomato sauce and then fill up the can with hot water and add it.

Then add cumin, chili powder, onion powder, curry powder, pepper, and lime juice

I let the sauce cook for just a bit, and then add about a cup of it to the meat mixture.

In a cake pan I line with foil

I add a little of the sauce to the bottom just to coat

Put 6 of you cooked cauli rounds

then sauce all over them

then meat mixture and then cheese

and then repeat...

with cheese being you last topping

if you have any sauce left over, just pour on top

bake @ 350 for about 10-15 mins



This can be done with chicken or just cheese and no meat

Lasagna Casserole

12 cauli rounds (recipe for the cauli rounds are not mine, recipe can be found in link below)
I make the mixture and bake them in muffin top pans

 or you can use the same mixture and put it on a cake pan or pizza pan, cook it and then cut into strips...
*note* to me the cauli rounds are more fulfilling, then if you cut the cauli mixture into strips like lasagna noodles...so yes it different but more satisfying..

1 lb of hamburger meat
cottage cheese or ricotta (ricotta is better for induction)
mozzarella cheese
Italian seasonings
minced garlic
Make your own spaghetti sauce or use No sugar added spaghetti sauce 
fresh parsley

Make your cauli rounds first
brown your hamburger meat with minced garlic and Italian seasonings, strain and set aside..
add your sauce to the meat mixture

layer some meat mixture
then cauli rounds (6) of them
then cottage cheese or ricotta
then a layer of mozzarella
then repeat
top with fresh parsley 
Bake @ 350* until cheese is melted
