Mediterranean eggplant
1 large eggplant
oil to fry
1 tbls of minced garlic
olive oil and vinegar to saturate
handfull of cilantro chopped up
Slice your eggplant - but not too thin
fry your eggplant in hot oil until browned on both sides and then place on a paper towel to soak up oil
salt the eggplant while still warm
place your eggplant in a dish and cover the bottom of the dish with olive oil and vinegar and then top with garlic and cilantro - let chill in the frig for at least two hours to let the eggplant soak up the vinegar and olive oil
serve cold

Squash and Zucchini Pasta sala
Squash and Zucchini Pasta Salad
___Ingredients_______________________________
2 yellow squash washed and sliced
2 zucchini washed and sliced
1 cup of grape of cherry tomatoes sliced in half
2 Tbls of olive oil
½ Tbls of minced garlic
Salt and pepper to taste
¼ cup of Kraft Sun Dried Tomato dressing
1 small box of dreamfields penne pasta
___Preparation______________________________________
Sauté’ squash and zucchini until lightly browned in olive oil.
Add salt, pepper and minced garlic until garlic is fragrant.
Mix all the above together in pot with dressing and tomatoes till warmed through.
Cook noodles and serve with dish
Good served alone or as a side dish
Cut in half for a smaller dish

Pakistani Vegetable Dish

1 onion sliced
1 large can of tomato sauce
1 cup of water
1 can of green beans
1 small bag of frozen cauliflower
and any other low carb vegetable of your choice
1 Tbls of cinnamon
Salt, pepper, and Cumin to taste
___Preparation______________________________________________
Sautee’ onions and add can of tomato sauce
Add the water, green beans, cauliflower, cinnamon, salt, pepper, cumin, and boil till cauliflower is soft.

Cut up zucchini and squash and fry for about five minutes
and a couple of tbls of minced garlic and continue cooking
add a few sprinkles of seven spice, salt, pepper, garlic powder
add 1 cup of water, 1 chicken bouillon (I use maggies), 1 tomato peeled and chopped
Put lid on, until soft
Remove lid until water is gone and sauce is remaining
Cut up onion and fry until soft
Cut up zucchini and squash and fry for about five minutes
and a couple of tbls of minced garlic and continue cooking
add a few sprinkles of seven spice, salt, pepper, garlic powder
