I got the idea for this recipe from www.sugarfreesheila.com and then altered it

Coconut flour cake with Chocolate icing

Coconut cake with chocolate icing

1/2 cup coconut flour
1/2 tsp sea salt
1/4 tsp of baking soda
6 eggs
1/2 of grapeseed oil
I used about 30 drops of ez-sweetz
1 tbls of vanilla

I sifted the flour, salt and baking soda together in a bowl
mixed eggs, grapeseed oil, ez-sweetz, and vanilla
then put altogether and baked at 325 for about 20 minutes, I just watched it and took out when done....

icing
1/3 cup of heavy whipping cream
2 oz of cream cheese softened
2 tbls of butter softened
2 tbls of unsweetened cocoa
4 drops of stevia
15 drops of ez-sweetz
1 oz of unsweetened chocolate melted

whip heavy whipping cream until stiff
beat cream cheese and butter, then blend in cocoa and sweetener
carefully fold in the whipped cream, melt chocolate and mix in with spatula

Chocolate Coconut Almond cups

Chocolate Coconut Almond candy

Chocolate
3/4 cup coconut oil (organic unrefined virgin)
1 Tbs cocoa powder
1 tsp vanilla extract
25 drops of ez-sweetz

almond butter mixture
2 Tbs almond butter
1/2 Tbs butter
5 drops of ez-sweetz

Heat coconut oil until liquid and mix in the other ingredients until well blended. Heat almond butter ingredients for 15 seconds and stir very well to combine. Use a 12 cup non-stick cupcake pan. Pour a thin layer of chocolate in the the bottom of each round and put into the freezer. This will not take longer then 5 minutes. Put the almond butter mixture into a sandwich bag, cut a tiny hole at the bottom and put some in the center of each one. Stick back in the freezer for about 5 minutes. Pull out and pour remaining chocolate over the top to cover the almond butter. Put back in the freezer for 5 minutes to set and remove to the fridge.
These have to stay refrigerated or they will melt.

Chocolate Peanutbutter cups

1/4 cup unsalted butter
1/4 cup of coconut oil
1 oz unsweetened chocolate
9 splenda packets or equal amount of liquid splenda (ez-sweetz)
1/2 cup vanilla whey protein powder
1/4 cup of peanut butter (I get mine at whole foods, the one you grind yourself)
1 tbsp of heavy whipping cream

Melt your butter, chocolate, and coconut oil in a double boiler (I use an metal bowl and place it in pot of water and bring it to a boil)
while that is melting, I add the rest of my ingredients in a bowl and then when the chocolate mixture is melted, I pour it over the top of my other ingredients and then just mix it altogether with a spoon.
I place 35 mini cupcake papers on a cookie sheet and fill them half way with my recipe, then place them in the freeze till set, then take them out and place in a baggie and keep in the fridge....

I have to warn you ahead of time, these are sooo good they are hard to resist, but with less than a full carb in each one, you should do ok....
