Bengali Chicken in Coconut Milk
___Ingredients_______________________________________________________
1 cut up chicken
½ of an onion sliced
2 tsp. of minced garlic
1 tsp. fresh ginger root
½ tsp of turmeric
1 tsp of chili powder (more or less) desired taste
Use Indian chili powder if desired taste is spicier
2 bay leaves
½ tsp of garlic powder
½ tsp of ginger powder
Salt & pepper to taste
½ of a can of coconut milk (use whole can for more chicken)
2 Tbls of Olive oil
___Preparation_______________________________________________________
Sauté onions, garlic, and fresh ginger root in olive oil till browned
Add chicken pieces and fry with turmeric, garlic powder, ginger powder, chili powder, salt, pepper, and bay leaves till almost done.
Add ½ can of coconut milk, cover and place on medium heat cook until chicken is done.
serve with cauli rice
